pour over chemex BREW GUIDE
Place the paper filter on the top section of the brewer.
Heat the water.
Rinse the filter with hot water, this preheats the brewer and gets rid of any paper flavor from the filter.
Discard the water.
Pour ground coffee inside the filter.
Slowly pour hot water on the coffee, wait and let it soak.
Start the second pour, making sure to reintegrate the coffee and water. Pour with a wiggling motion.
Slowly take the filter out of the brewer.
Stir the coffee and fill your cup.
Enjoy your coffee!
Chemex is considered one of the best modern creations by the Illinois Institute of Technology's designers and it's part of an exibition at MoMa, Museum of Modern Art in New York.
"SLOW FILTER" COFFEE RITUAL
The Chemex method is part of the "pour-over" ones, a manual extraction made by pouring water on ground coffee through a paper filter. This procedure calls for experience and dexterity to balance the first infusion and the final one.
